When September 1st hit it was like my brain went into full on fall mode with no looking back. Despite it still being warmer than 70 degrees almost every day this week and it still technically being summer, I’m feeling all the fall vibes. So what does that mean? Pumpkin recipes are starting ya’ll. And let me tell you – there are so many pumpkin goodies coming your way!!! Starting with these paleo pumpkin waffles.

You might be wondering why I called them harvest waffles (read your mind didn’t I?), and I promise there’s a reason. When I was little one of my favorite memories was when my mom would make us what she called “harvest pancakes.” We knew fall was upon us when we’d wake up to the smell of them. I remember piling my plate high, only being able to finish about half because they were so full of goodies like nuts, cranberries and other real, wholesome ingredients (plus I’d always drizzle, aka pour a river, of maple syrup on top).

They’d always make me so full – my stomach AND my heart.

My family always ate dinner together (like ALWAYS, my parents and I still do today since I live at home right now and I love it) at the table, but breakfast together was always a special treat. It either meant a birthday, mothers/fathers day, a holiday OR in this case, a celebration of our favorite season. Meals and wholesome food have always played a huge role in our family life. We love sharing good food together and coming together over an amazing meal. We’re a family of foodies and I’m so thankful that I was instilled with that at a young age.

We called them harvest pancakes because they were a celebration of the current season and everything that was truly being harvested at that time. We’ve always loved celebrating the seasons with food and valued eating seasonally.

These paleo pumpkin waffles are like taking a trip back into my childhood. They’re the perfect way to kick off the coming autumn season and celebrate all of the delicious food that it brings. Topped with sautéed apples and you’ve got yourself a perfect fall treat! Note, if you want to use fresh, homemade pumpkin puree there are directions on my paleo pumpkin spice dip recipe.

Paleo Pumpkin Harvest Waffles

Ingredients

  • 2/3 cup coconut flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 Tbsp cinnamon
  • 1/2 tsp nutmeg
  • 4 eggs
  • 1/2 cup pure pumpkin puree
  • 3-4 Tbsp honey
  • 1/4 cup coconut oil
  • 2 tsp pure vanilla extract
  • 2/3 cup dried pears any dried fruit would work!
  • 1/2 cup pecans
  • 1/3 cup raw pumpkin seeds

Instructions

  1. While you're combining your ingredients, make sure your waffle iron is on and starting to heat up.
  2. In a large bowl, combine the coconut flour, baking soda, salt, cinnamon and nutmeg and mix well.
  3. In a separate bowl, combine the eggs, pumpkin, coconut oil (melted), honey and vanilla extract. Mix until fully combined.
  4. Slowly add your dry ingredients to your wet ingredients and mix well.
  5. Then, chop up your dried fruit and pecans. Add both, plus the pumpkin seeds, to the batter and stir.
  6. Place batter in your waffle iron, top with your favorite toppings (I like doing apples sautéed in coconut oil, nuts and a drizzle of honey) and ENJOY!
