Paleo Chocolate Chip Pumpkin Bread
Fall may have been underway for a little while now, but it officially feels like fall now that it’s October. I just absolutely LOVE this season and this month. The cozier weather, the cozier food, the gorgeous leaves, the sunny yet crisp days, the flavors, the pumpkin patch adventures. It gives me all the dang feels. October rolls around and I just seem to get a little happier and it’s always been that way! Does it have something to do with this paleo chocolate chip pumpkin bread this year? Probably.
It’s funny though because my least favorite holiday is Halloween. I’ve never been a huge fan and as I’ve gotten older it’s become less and less of a thing in my mind. Yes, it was fun dressing up as a kid (my brother and I would usually always go as some sort of duo!) and who doesn’t love organizing their Halloween candy after they get home!? I was an almond joy and Reese’s peanut butter cup girl alllll the way so you betcha I traded my brother for those.
As I’ve gotten older and ditched the Halloween candy, I’ve loved finding new, healthier ways to celebrate the season, while still having yummy treats on hand. This paleo chocolate chip pumpkin bread takes the cake (the loaf??) when it comes to seasonal treats in my opinion. Such a classic taste with such a healthier twist.
I love using 100% dark chocolate (my favorite is the Montezuma’s absolute black barthat I find at Trader Joe’s! I know Eating Evolved also has a midnight dark chocolate bar that’s a great option) in it to make it fully refined sugar free, but feel free to use whatever type of chocolate satisfies your sweet tooth! Also, if you’re on the Specific Carbohydrate Diet (ya’ll know I’m taking a slightly less strict approach right now from when I first started and cacao is one of the things I decided to add back in), you can always hold off on the chocolate and add in nuts or seeds for that crunch instead.

Paleo Chocolate Chip Pumpkin Bread
Ingredients
- 2 cup almond flour
- 2 Tbsp coconut flour
- 1 1/2 Tbsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground ginger
- 1/8 tsp salt
- 1/2 tsp baking soda
- 1 cup pumpkin puree make sure the only ingredient is pumpkin!
- 2 eggs
- 1/4 cup almond buter
- 3 Tbsp honey
- 1 tsp pure vanilla extract
- 2 Tbsp melted coconut oil
- 1 bar 100% dark chocolate
Instructions
- Preheat your oven to 375 degrees Fahrenheit and prepare a bread pan by greasing the sides with coconut oil or lining with parchment paper.
- In a large bowl, mix the almond flour, coconut flour, cinnamon, nutmeg, ginger, salt and baking soda. Stir until combined and set aside.
- In a separate bowl start by whisking together the eggs, pumpkin puree and almond butter. Then, add the honey, vanilla extract and melted coconut oil. Stir until combined.
- Slowly add the dry ingredients to the wet ingredients until fully mixed together.
- Chop up the chocolate bar into desired chunk sizes and add fold into the bread mixture.
- Place batter into the prepared bread pan, smooth out the top, add more chocolate chunks on top if desired and cook for 45-50 minutes.
- Let cool before slicing and ENJOY!
