You guys know my obsession with cauliflower rice oatmeal is REAL and so is my obsession with pumpkin so you can only imagine my obsession with this version!! Seriously, this pumpkin cauliflower rice oatmeal is EVERYTHING. It’s like biting into fall with every spoonful. It’s the coziest bowl, perfect for crisp fall mornings.

When people ask me if I actually like cauliflower rice oatmeal I tell them DUH (because why would I eat it so often if I didn’t actually like it!?), but also that it doesn’t truly taste or feel exactly like oatmeal when you eat it. I think that’s a big thing when introducing people to healthy eating or alternatives to old favorites (not that oatmeal itself isn’t healthy!) – you can’t hype it up too much, otherwise they’re bound to be disappointed. Going into your first cauliflower rice oatmeal experience with too much of expectations that it will be just like normal oatmeal is bound to be a letdown. BUT cauliflower rice oatmeal really is delicious and a perfect alternative for those of us who are grain free or paleo.

I was really sad when I realized that oats hurt my stomach (even before going paleo) because there was nothing I loved more than a big cozy bowl of protein oats in the morning topped with all of my favorite goodies. My life was changed (dramatic? yes. True? YES) when I tried out cauliflower rice oatmeal because it finally gave me that sense of my usual cozy oats!

This option is a great low-inflammation option and packs a punch of veggies and other healthy goodies (like protein if you use Vital Proteins or another favorite protein powder) first thing in the morning. I love topping mine with a generous dollop of nut butter, pumpkin seeds and apples sautéed in coconut oil and cinnamon to make it more filling. And it’s always about the toppings… right!?

Paleo Pumpkin Cauliflower "Oats"

Ingredients

  • 2 cup cauliflower rice I like using frozen cauliflower rice
  • 1/3 cup pumpkin puree
  • 1/2 - 1 Tbsp honey amount depending on how sweet you like your food
  • 1 tsp pure vanilla extract
  • 2 Tbsp coconut flour
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1 scoop Vital Proteins vanilla coconut water collagen Use any vanilla protein powder you want! Or leave out all together.
  • 1/4 cup almond milk
  • Optional Toppings: nut butter, pumpkin seeds
Sauteed Apples (Topping)
  • 1/2 apple
  • 2 tsp cinnamon
  • 2 tsp coconut oil

Instructions

  1. If you are using frozen cauliflower rice, place in a pot with about 1/4 cup of water, place a lid over it and cook on medium heat until soft and fully cooked. Then drain the water out and place back on the stove.
  2. If you're using fresh cauliflower rice, steam until fully cooked and place back into a pot (without any excess water).
  3. Next, keep your cauliflower rice cooking on low/medium heat and add in the pumpkin, honey and pure vanilla extract and stir.
  4. In a small bowl, mix together your pumpkin pie spice, cinnamon (I like adding extra cinnamon instead of overloading it with pumpkin pie spice), coconut flour and vital proteins or other protein powder.
  5. Pour your powder mixture into the cauliflower rice and stir well, slowly adding the almond milk as needed.
  6. Let cook until it thickens.
  7. As it is cooking, sautée your apple in the coconut oil and cinnamon.
  8. Once the cauliflower rice oatmeal is done cooking, top with the sautéed apples, almond butter and pumpkin seeds and ENJOY!
