Paleo Double Chocolate Coffee Cookies
If you know me at all you know I LOVE my coffee. Not the kind of love where I like drinking multiple cups a day or where I like getting fancy with my drinks, but the kind of love where I savor my early morning cup of black coffee like it’s sacred. And now with these paleo double chocolate coffee cookies in the picture? My morning coffee ritual just got a whole lot better.
There’s something so ritualistic and comforting about my morning cup of coffee. Just as much as I love my coffee, I love my quiet early mornings. I’m that crazy morning person that loves getting up at 5am to catch the sun rising and physically can’t sleep past 6 or 7am. My body thrives on an early morning, early bedtime schedule.
Waking up at 5am and being greeted by the smell of fresh coffee seriously makes my heart so dang happy. I love getting to sip on it as I wake up and wait for my body to wake up enough to hit the road running. The funny thing? As of June 2018 I don’t even drink caffeinated coffee… Yup, you heard me right. I’m that crazy girl that orders decaf every single time. But the ritual is still just as sacred to me! It’s like a warm, comforting blanket that I know I get to wrap myself up in every morning. Some people have comfort foods, I have comfort coffee.
I love the taste of it, the ritual of it and sharing it with people in my life. Getting to sip on coffee before work with my parents or going out to coffee with a good friend or even just treating myself to coffee are some of my favorite moment in life. And what could be better than sharing my love of coffee alongside my love of chocolate!? Seriously, these coffee chocolate cookies are like the ultimate (healthy) comfort food.
These paleo double chocolate coffee cookies take my love of coffee to the next level, by combining it with rich, dark chocolate. They’re ooey-gooey and filled with wholesome, healthy ingredients. They’re so healthy you can eat them right alongside your morning cup of coffee for an extra jolt of energy. Or, if you’re like me and don’t drink (or eat) caffeine, you can make this recipe with decaf coffee grounds!

Paleo Double Chocolate Coffee Cookies
Ingredients
- 3 cups almond flour
- 2 1/2 Tbsp coffee grounds
- 3 Tbsp raw cacao powder
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 2 Tbsp coconut oil
- 1/2 cup almond butter
- 6 Tbsp honey
- 1 egg
- 2 tsp vanilla extract
- 1/4 cup strongly brewed coffee OR almond milk
- 1 bar dark chocolate I like to use a 100% dark chocolate bar to make this recipe fully refined sugar free
Instructions
- Preheat your oven to 375 degree F.
- Prepare a baking sheet by "greasing" it with coconut oil.
- In a large bowl, mix the almond flour, instant coffee, cacao powder, baking soda, baking powder and salt. Stir well.
- In a separate bowl, mix the egg, coconut oil (make sure it is melted beforehand), almond butter, honey, vanilla extract and brewed coffee (or almond milk).
- Slowly mix the dry ingredients with the wet ingredients.
- Chop your chocolate bar into small chunks and mix into the batter.
- Form into cookies and place on the baking sheet.
- Bake for 11-13 minutes. ENJOY!
- Store in an airtight container in the fridge for up to a week (or freeze them and keep for a few weeks!)
