Paleo Chocolate Chip Scones
Scones are one of my absolute FAVORITES. They remind me of walking to the little local coffee shop or bakery with my dad when I was little (a weekend tradition we had) and sharing a scone while we chatted about life. :)
Obviously, due to my gut health issues I can’t enjoy traditional scones any longer, but these DEFINITELY do the trick!! They’re not the exact same texture, but man do they hit the spot and fulfill the craving. :) Especially these chocolate chip scones!! Some might judge me for having chocolate for breakfast but… I just can’t say no to these scones with a cup of coffee.
These paleo scones are the perfect snack, dessert or breakfast and are the perfect thing to bake while we’re all practicing social distancing. :) Bake these on FaceTime with your girlfriends, bake them with your kiddos who are home from school, bake them when you need a self-care day! Paleo Chocolate Chip Scones
Ingredients
- 3/4 cup + 3 Tbsp almond flour
- 3/4 cup coconut flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3 eggs
- 1/4 cup melted coconut oil
- 1 Tbsp pure vanilla extract
- 1/4 cup + 1 Tbsp honey
- Dark chocolate chips or 1 bar of dark chocolate
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- In a large bowl, mix the egg, melted coconut oil, vanilla extract and honey and stir well.
- In a separate bowl, mix the almond flour, coconut flour, baking soda and salt.
- Combine the wet and dry ingredients and stir well.
- Mix in the chocolate chips or chunks of chocolate bar.
- Form into a circle (about one inch thick) on a cookie sheet (lined with parchment paper or greased with coconut oil) and bake for 20-22 minutes.
- Let cool for 15 minutes, cut into desired size scones and…
