I have always loved gingerbread. Like LOVED it. Not only is it so delicious, but i’s just so quintessentially Christmas. But seriously, it never feels quite like Christmas until I have some sort of gingerbread in my life. So this year, this paleo gingerbread went down to satisfy my cravings!

This year, when I realized molasses wasn’t SCD-friendly, I wasn’t too distraught until I remember that DUH molasses is like the main ingredient in gingerbread!!! I slightly panicked thinking about a gingerbread-less holiday season. But I’ve never been one that gives up easily and I’ve always loved a good challenge. I knew I would be, somehow, eating paleo gingerbread.

And you know what they say – with a little hard work, anything is possible.  After some experimenting I finally nailed this molasses-free gingerbread loaf and I couldn’t be happier to be able to enjoy one of my favorite holiday flavors! Add a coconut butter glaze on top and you’ve got yourself one addicting (and healthy!!) treat!!

One of the reasons why I love developing recipes so much is because I am able to make it easy for others that struggle with gut health issues to still fully enjoy fun treats, especially during special times of the year like this. I think it’s easy for many of us that struggle with health issues to just disregard creative desserts and tasty treats and sweets  because we can no longer whip up a batch of our go-to’s from when we were younger. I love that I can create recipes that help me (and all of you!) feel good, while still indulging.  Because what are the holidays without a little indulgence?

Paleo Molasses-Free Gingerbread Loaf

Ingredients

Bread
  • 4 eggs
  • 1/3 cup honey
  • 2 tsp pure vanilla extract
  • 1/4 cup melted coconut oil
  • 1/4 cup almond butter
  • 1/4 cup water
  • 2 cups almond flour
  • 2 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1 tsp ground ginger
  • 1 tsp nutmeg
  • 1 Tbsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 cup pecans (optional add-in)
Glaze
  • 1/2 cup coconut butter
  • 2 Tbsp coconut oil
  • 1 Tbsp honey (optional)

Instructions

  1. Preheat your oven to 350F and prepare a bread pan by "greasing" it with coconut oil or lining with parchment paper.
  2. In a large bowl, mix together the eggs, honey, water, vanilla extract, melted coconut oil and almond butter.
  3. In a separate bowl, mix the almond flour, coconut flour, baking soda, ground ginger, nutmeg, cinnamon, cloves, salt and pecans.
  4. Mix the wet and dry ingredients and stir until fully combined.
  5. Pour the batter into the prepared bread pan and bake for 40-45 minutes.
  6. For the glaze, melt the coconut oil, coconut butter and honey in a small pan.
  7. When the loaf is done baking, drizzle or spread the glaze on top.
