Banana But Paleo Bread Pudding

When I first started SCD in the beginning of August (how CRAZY that it’s been so long already) I was completely overwhelmed and I’m sure any of you out there who have done, or are doing, SCD or have totally had to change the way you’re eating to benefit your health, can relate.
I remember perusing the “legal/illegal” list for the first time and I could barely wrap my head around it. I felt so lost and nervous to be starting on this journey because it required so many changes. I could no longer buy my go-to snacks (bye bye Purely Elizabeth granola, rice cakes, Simple Mills crackers, Kite Hill “cream cheese” and RXbars…) and all I could think was HELLO WHAT IS A GIRL TO SNACK ON?!
I was also so overwhelmed by the thought of meal prep because I knew I would have to start making everything from scratch. No more bottled nut milk, canned soups or beans, etc. Although I always loved cooking and making everything from scratch when I could, college can get busy, so those easier options were nice to have on hand.
I got into the groove of SCD much quicker than anticipated, but I still kept wishing there were easier options on days that I wasn’t feeling up to cooking so much. I also simply wished there were more FUN options that were SCD-friendly! As much as I absolutely love meals comprised of simple proteins, healthy fats and lots of veggies, I did miss some of the fun products I used to have on hand.
SO when I stumbled onto Liberated Specialty Foods on Amazon and started exploring their website I almost cried tears of pure joy!! It was started in 2015 by Stacey Schlaman who simply wanted to better the health of her family and give people the option to still eat their favorite foods while being paleo or doing SCD. On their website it says: “I want people to be able to eat what they need…what their diet requires…without having to feel left out.” How amazing is that?! And that’s exactly how I felt when I found LSF. I felt like I finally had options (normal people options!) for yummy treats and products that I could have on hand. I’m talking SCD-friendly graham crackers, ketchup, pizza crusts, crackers, cookies, waffles, breads, donuts, energy balls, cashew butter cups, even mini marshmallows!!! It amazes me how many options they have.
Their coconut flour bread and cashew cream bread were the first products of their’s that I fell head-over-heels in love with. They toast up perfectly and are subtly sweet and creamy, if bread could be creamy. This recipe captures the deliciousness of these breads PERFECTLY and I suggest ordering a loaf or two for yourself asap! But while you wait for your LSF bread to come in the mail, feel free to try this recipe out with other paleo breads! It’s perfect for breakfast or for a healthy sweet treat.

Paleo Banana Nut Bread Pudding
Ingredients
- 1/2 loaf Liberated Specialty Foods cashew creme or coconut bread(about 2 cups of bread)
- 2 eggs
- 1/4 cup nut milk
- 2 Tbsp cinnamon
- 2 tsp pure vanilla extract
- 2/3 ripe banana
- 1/4 cup cashews
- 1/4 cup pecans
- 1/8 tsp salt
Instructions
- Preheat your oven to 375 degrees F.
- Cut your bread and into small cubes (about 1/2 inch to 1 inch wide) and set aside.
- In a small bowl mash your banana and set aside.
- In a larger bowl, whip your eggs together and add the mashed banana, nut milk and vanilla extract.
- Mix in your cinnamon and salt.
- In a small casserole dish (the one I used has a 6 1/2 inch diameter and is about 3 inches deep) layer one layer of bread, sprinkle some of your nuts and pour some of your liquid. Do this layer by layer until all of your bread is in the casserole dish and covered. Make sure to save some of the liquid and nuts to go on top of the last layer!
- If you're obsessed with cinnamon like me, sprinkle some extra on top before baking!
- Bake for 30-40 minutes.
