Vegan Spiced Cauliflower Steaks + Avocado Cilantro Sauce
I can never turn down a good cauliflower steak. Seriously… I think I have a cauliflower addiction.
I’ve always been in love with veggies, but ever since my serious ulcerative colitis flare last summer, I’ve pretty much steered clear of almost all raw veggies, instead opting for steamed, roasted or sautéed. Nine times out of ten, roasted veggies wins.
And I know what some of you are probably thinking… no raw veggies!? Trust me, I was just as appalled when a doctor first told me to cut them out almost completely. I used to eat raw veggies like they were going out of style. I thought more always meant better when it came to healthy food.
Little did I know, so many raw vegetables was causing damage to my already sensitive digestive system, especially raw cruciferous veggies.
Now? My rule, especially with cruciferous veggies like cauliflower, broccoli, brussel sprouts and cabbage is cook them until they’re practically burnt. It works like a charm. ;)
It really goes to show that “healthy” isn’t one-size-fits all. Just because raw kale and salads packed with raw veggies are touted as the picture-perfect version of health and wellness, doesn’t mean it’s true for YOU.
For me, healthy means cooked veggies and never, ever eating raw greens. It means eating a mix of the Specific Carbohydrate Diet and paleo, but also sneaking in a rice cake or a little bit of dark. chocolate here or there when. the craving is really big.
It means following a strict protocol, while also striking balance.
For you, it may mean something completely different and that’s 100% okay.
But, no matter what healthy means to you, I hope we can ALL agree that these vegan cauliflower steaks are out of this WORLD. They spice of the “steaks “ is perfectly balanced by the creamy sauce.
Trust me, you’ll become just as addicted to cauliflower once you’ve tried this.
