Quick & Easy Avocado Tuna Egg Salad

Even though I’m lucky enough to work for myself from home I still count on quick and easy lunches to fuel my day. When I first started my entrepreneurial journey, I took up WAY too much time in the middle of the day making my lunches. Chopping, roasting, sautéing… I realized it was getting out of hand.
One of the biggest things I’ve learned from being an entrepreneur is still maximizing my time and acting, in some ways, as I would if I had a traditional, out-of-the-house job. The biggest way I do this? Meal prep, meal prep, meal prep!
I neglected meal prep the first few months working for myself and I realized how badly I missed being able to just grab lunch and feel like I could actually sit down and enjoy it because I hadn’t already taken “too much time” preparing and cooking it.
Besides the time-saving factor of meal prepping, I also love the money saving aspect. How can you save money through meal prep?
Well, meal prep forces you to meal plan, meaning you create a weekly game plan for lunches and dinners (and breakfasts if you want!). This helps you know exactly what you need to buy and keeps you from buying a lot of extras “just in case.” Start by creating your meal plan list and then create a grocery list off of that; when you go into the store with a solid plan of action it keeps you on-track and on-budget.
This tuna egg salad has been one of my favorite quick, easy and budget-friendly meal prep options lately for lunch. It’s packed full of protein, healthy fats and nutrients to fuel my work day and keep my brain sharp and alert.
And I know – tuna and egg together!? Sounds weird doesn’t it? When my mom mentioned the combo a few weeks ago I thought she was crazy too. But then I whipped up this recipe and I can’t stop eating it!
I loved using the Wild Harvest tuna in it because it’s high-quality but didn’t take a toll on my wallet like so many other protein options. Mixed with the egg you get an even bigger protein punch and the avocado gives a good dose of healthy fats. Served over a bed of greens, on toast or with paleo crackers and you’ve got yourself a perfect meal!

Paleo Quick & Easy Avocado Tuna Egg Salad
Ingredients
- 2 cans of Wild Harvest Pole & Line Caught Chunk White Albacore Tuna
- 6 hard boiled eggs
- 1 mashed avocado
- 1 tsp Wild Harvest Ground Black Pepper
- 1 tsp celery seed
- 1 tsp salt
- 1 cup chopped celery
- 1/2 cup chopped pickles
- 4 cups arugula
Instructions
- Start by hard-boiling your eggs. Place eggs in a pot with enough water to cover them. Put on the stove on high. Once boiling, put on a timer for 8 minutes. Once the timer sounds, get the eggs (carefully!) out of the hot water and place in a separate bowl full of cold water. Set aside.
- In a small bowl, mix together your spices (pepper, celery seed and salt). Set aside.
- In a large bowl mash together the 2 cans of tuna and the avocado. Mix until combined.
- Peel your eggs and chop into small pieces. Add to the tuna avocado mixture
- and stir until combined combine.
- Add in your chopped celery and pickles and stir once again.
- Serve over a bed of arugula and enjoy!
