Paleo Lavender Lemon Muffins

Although the world feels like a confusing and scary place right now, I’m finding joy in small pockets – the trees starting to bloom, the smell of baking in my house, my access to healthy foods, spring right around the corner… there is still so much to find JOY in.
One of the things that’s REALLY bringing me joy right now? These paleo lavender lemon muffins made from my absolute favorite paleo-friendly flour from my friends at Bob’s Red Mill.

And when those issues got even worse and I was diagnosed with ulcerative colitis, Bob’s Red Mill let me still enjoy one of my favorite pastimes – baking.
When I’m anxious, I bake. When I need to get lost in my thoughts, I bake. When I want to be creative, I bake. When I want to show someone that I love them, I bake. I love baking but with severe gut health issues that can get tricky.

To BLOOM WITH BOBS this spring, I decided to get creative and give baking with lavender a whirl. Lavender is one of my favorite smells and am always pumping lavender essential oils into my apartment, so I knew having muffins with lavender in them just HAD to be good.
Let’s just say I was VERY right!! These paleo (and specific carbohydrate diet friendly) muffins are PERFECT for spring – sweet, yet tangy from lemon, with a kick of lavender. Paired with tea and eaten in the sunshine… you can’t help but smile!

Paleo Lavender Lemon Muffins
Ingredients
- 2 1/2 cup almond flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1 1/2 Tbsp ground culinary grade lavender
- 3 eggs
- 1/4 cup + 2 Tbsp honey
- 1/4 cup melted coconut oil
- 1/2 cup raw almond butter
- 2 tsp pure vanilla extract
- 1/4 cup + 2 Tbsp lemon juice (about 1 1/2 lemons juiced)
- GLAZE (optional): 1/4 cup coconut butter
Instructions
- Preheat your oven to 350 degrees Fahrenheit and prepare a muffin tin.
- In a large bowl, combine the almond flour, salt, baking soda and ground lavender.
- In a separate bowl, combine the eggs, honey, melted coconut oil, raw almond butter, vanilla extract and lemon juice.
- Combine your wet and dry ingredients and mix well.
- Pour your batter into the prepared muffin tins.
- Bake for 20-25 minutes. Let cool for 15 minutes.
- Drizzle with melted coconut butter, sprinkle more lavender on top and enjoy!
