Something about being away from home for a month got me all nostalgic. This past month in Europe with my parents was amazing and it made me feel extra grateful to have such a close relationship with them both. I truly feel like the luckiest girl!

I’ve always been extremely close with my parents, and I think a lot of it is because I was homeschooled until 6th grade. I spent day in and day out with my mom (mom, teacher, biggest supporter… she’s always been like freaking super woman!!!) and older brother and would always spend a lot of family time when my dad wasn’t working – working in our yard, spending weekends on Whidbey Island, watching movies on the weekend, etc. The older I get the more I realize how much of a blessing that it is that I get along so well with my family. I pretty much spent every waking hour with my mom this last month and we didn’t get sick of each other if that tells you anything.

One of the things that always knit our family so closely together was our love of good, wholesome food. We dug in the dirt in our garden together, walked to our favorite farmer’s farm stand every weekend, made fresh juice and said “health and happiness!” in unison as we cheers-ed (my dad was always the juice master!) and we baked/cooked a lot together.

We went through a time when I was younger where my mom was trying out a gluten free diet and she would bake the most amazing almond flour chocolate chip cookies. I swear I can still taste them when I think about them!!!

I decided I wanted to try and recreate this childhood favorite, but without the dairy and sugar and they came out even better than expected. Biting into these cookies seriously brings me back to the simpler times in life and that makes my heart really happy!!! I’ve always loved how food has the power to bring back memories and bring people together.

I made these with almond butter so that they are paleo-friendly (and because peanut butter just hasn’t been vibing with my stomach), but any nut butter would taste AMAZING! It’s kind of like a “choose your own adventure” book… but a “choose your own adventure” cookie.

Paleo Almond Butter Chocolate Chunk Cookies

Ingredients

  • 3 cups almond flour
  • 2 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 Tbsp coconut oil
  • 1/2 cup almond butter (can sub for any other nut butter!)
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1/4 cup almond milk
  • 6 Tbsp raw honey
  • 1 dark chocolate bar - I love using the Eating Evolved midnight chocolate bar because it has zero sugar!

Instructions

  1. Preheat your oven to 375 degrees F.
  2. Prepare a cookie sheet by greasing with coconut oil.
  3. In a large bowl mix together the coconut oil (make sure it's melted!), almond butter, eggs, pure vanilla extract, almond milk and honey.
  4. In a separate bowl mix together the almond flour, coconut flour, baking soda and salt.
  5. Slowly add the dry ingredients to the wet and stir until everything is combined.
  6. Break up your chocolate bar into small chunks and add to the batter and mix.
  7. Roll the dough into balls and place on your cookie sheet. You can either leave them as balls OR you can flatten them with a fork!
  8. Bake for 10-12 minutes.
