There’s nothing like peanut butter and jelly to bring you back to the good ol’ days of childhood!! It’s actually funny, when I think of my childhood I think of almond butter and jelly sandwiches, but nothing (and I repeat - NOTHING) will ever replace the classic peanut butter and jelly combo!!

I’ve been on a huge peanut butter and jelly kick so I knew I had to make a fun creative recipe with that combination asap. I decided on these grain free, dairy free, refined sugar free peanut butter and jelly muffins and I am SO HAPPY with how they turned out!!

Since being gluten free for the last 6+ years, I haven’t found a gluten free bread that satisfies that soft gooey peanut butter and jelly sandwich vibe (such a tragedy) but these muffins … it’s almost like the perfect combo of soft “bread” and the gooey pb&j!!! Maybe I’m crazy, but I think these satisfy that peanut butter and jelly sandwich craving for sure. ;)

These peanut butter and jelly muffins are also specific carbohydrate diet friendly (and free of gluten, dairy, grains and refined sugar!) to help my fellow gut-health-issue-warriors out there thrive. :) I hope you love these as much as I do!

Grain Free Peanut Butter and Jelly Muffins

Ingredients

  • 1/2 cup coconut flour
  • 2 Tbsp almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp of salt
  • 4 eggs
  • 3/4 cup peanut butter
  • 2 bananas (mashed)
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 3/4 cup chopped strawberries
  • 1/2 cup jam (I use a fruit-sweetened one)

Instructions

  1. 1. Preheat your oven to 350 degrees F. 
  2. 2. In a medium-sized bowl, mix the coconut flour, almond flour, baking soda and salt and set aside.
  3. 3. In a separate bowl, mix the eggs, 1/2 cup of the peanut butter, mashed bananas, honey and melted coconut oil. Stir well.
  4. 4. Mix the wet and dry ingredients together and mix well.
  5. 5. Mix in the strawberries.
  6. 6. In each muffin tin, pour only halfway into each one, then dollop a bit of jam in the middle. Finish pouring the batter.
  7. 7. Now dollop a little more jam and peanut butter on the top of each muffin and swirl with a toothpick.
  8. 8. Bake for 45-50 minutes, let cool and ENJOY!
