I love that I can get the classic sugar cookie flavor, while being free of gluten, grains, dairy and refined sugar. The frosting, made with coconut butter, is truly the icing on top, making these even more irresistible (but you can totally make them without it too).

Paleo Sugar Cookies with Dairy Free Coconut "Frosting"

Ingredients

  • 2 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup melted coconut oil
  • 1/2 cup honey
  • 1 tsp apple cider vinegar
  • 1 1/2 Tbsp pure vanilla extract
  • FROSTING: 2/3 cup coconut butter, 2 Tbsp beet juice, 2 Tbsp honey

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large bowl mix your almond flour, coconut flour, baking soda, and salt. Set aside.
  3. In a separate bowl mix the egg, melted coconut oil, honey, apple cider vinegar and pure vanilla extract.
  4. Mix the wet and dry ingredients.
  5. Cool the dough in the fridge for 10 minutes.
  6. Form into cookies of your desired size and bake for 15-18 minutes.
  7. While the cookies are baking, make your frosting. Melt the coconut butter and add in the beet juice and honey and stir until combined. Add more beet juice for darker pink.
  8. Once the cookies are done baking, let cool fully and then frost.
  9. Store in an airtight container in the fridge for up to a week or in the freezer for as long as you desire!
