Is there truly ANYTHING better than the smell and taste of fresh banana bread!? I honestly don’t think there is. Banana bread, to me, is the ultimate comfort food. It reminds me of baking with my mom when I was little and never being able to stop at just once slice.

But with it getting warmer here in Seattle,  I haven’t been wanting to turn on the oven as much, but I knew I had to satisfy my banana bread cravings somehow. So these no-bake paleo banana bread bars (with the most delicious chocolate topping) were created and I can’t get enough!

Something I struggled with when I was first diagnosed with ulcerative colitis and started a healing diet (these can easily be made Specific Carbohydrate Diet friendly by simply not adding the chocolate top!) was that I thought I was going to have to take hours cooking every day.

Although eating in a specific way DOES take extra time and planning, it’s my goal to show that delicious, gut-friendly treats can also be EASY.

And what’s easier than no-bake treats!? These paleo banana bread no-bake bars truly take less than 25 minutes to prepare and then all you have to do is pop them in the freezer/fridge. OR, if you’re impatient like me, you can eat the batter straight from the bowl.

These paleo banana bread bars double as a healthy snack or a healthy dessert because they’re made with nourishing ingredients but also taste like the world’s best sweet treat. Truly irresistible!

Paleo No-Bake Banana Bread Bars

Paleo No-Bake Banana Bread Bars

Ingredients

  • 1 1/2 cup almond butter (can sub for any nut or seed butter)
  • 1 medium ripe banana
  • 1 Tbsp honey
  • 1/4 cup coconut oil
  • 1/4 cup coconut flour
  • 1/8. tsp salt
  • 2 tsp cinnamon
  • 1 dark chocolate bar (I love using the Eating Evolved midnight dark chocolate)
  • 1 tsp coconut oil

Instructions

  1. Prepare an 8X8 baking pan by lining it with parchment paper.
  2. In a small bowl, mash your banana and add in the almond butter, honey and melted coconut oil.
  3. In a separate bowl, mix the coconut flour, salt and cinnamon.
  4. Combine the wet and dry ingredients and stir well.
  5. Place batter in your prepare pan and spread out until evenly distributed.
  6. Melt your chocolate bar and the other 1 tsp of coconut oil and stir together.
  7. Pour over top of the batter and smooth.
  8. Place in the freezer for 1 hour.
  9. Cut and enjoy!
  10. Store in an airtight container in the fridge for up to one week (or in the freezer for as long as you’d like!)
