Ya’ll always ask for more savory recipes so you are WELCOME! ;) It’s funny because typically my lunches and dinners are just a protein thrown in a bowl with a bunch of roasted veggies (and probably a drizzle of tahini), but having to create recipes for ya’ll makes me create real meals.

I have always loved burgers of any type and it’s truly one of the EASIEST things to make at home even though it feels fancy. Making plain ol’ chicken burgers is always a good meal-prep move, but these paleo pesto chicken burgers take it UP a notch! I use the vegan kale pesto from Trader Joe’s to make these most of the time, but I’ve also used my own vegan avocado cashew pesto and it’s amazing!

Paired with homemade sweet potato fries and paleo ketchup (I love the Primal Kitchen ketchup) and you’re set for the best lunch or dinner!

Paleo Pesto Spinach Chicken Burgers

Ingredients

  • 1 package ground chicken (turkey also works)
  • 1 egg
  • 1/2 cup pesto of choice
  • 1/2 cup spinach (finely chopped)
  • 1/4 cup chopped white onion
  • 3 tsp garlic powder
  • 3 tsp salt
  • 1 tsp black pepper
  • 2 Tbsp coconut flour

Instructions

  1. Preheat your oven to 400 degrees F and prepare a baking sheet by lining with parchment paper or greasing with coconut oil.
  2. In a large bowl mix your egg and ground meat together (I use a fork, potato masher or even my hands to make it easier).
  3. Next, stir in your pesto, chopped onions and chopped spinach.
  4. Lastly, mix in the garlic powder, salt, black pepper and coconut flour.
  5. Form into desired size burger patties and bake for 20-25 minutes (or until burgers reach at least 165 degrees).
