Scones are one of my absolute FAVORITES. They remind me of walking to the little local coffee shop or bakery with my dad when I was little (a weekend tradition we had) and sharing a scone while we chatted about life. :)

Obviously, due to my gut health issues I can’t enjoy traditional scones any longer, but these DEFINITELY do the trick!! They’re not the exact same texture, but man do they hit the spot and fulfill the craving. :) Especially these chocolate chip scones!! Some might judge me for having chocolate for breakfast but… I just can’t say no to these scones with a cup of coffee.

These paleo scones are the perfect snack, dessert or breakfast and are the perfect thing to bake while we’re all practicing social distancing. :) Bake these on FaceTime with your girlfriends, bake them with your kiddos who are home from school, bake them when you need a self-care day! Take care of yourself, be kind to each other, wash your hands, stay hopeful, STAY HOME. :)

Ingredients

  • 3/4 cup + 3 Tbsp almond flour
  • 3/4 cup coconut flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 eggs
  • 1/4 cup melted coconut oil
  • 1 Tbsp pure vanilla extract
  • 1/4 cup + 1 Tbsp honey
  • Dark chocolate chips or 1 bar of dark chocolate

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large bowl, mix the egg, melted coconut oil, vanilla extract and honey and stir well.
  3. In a separate bowl, mix the almond flour, coconut flour, baking soda and salt.
  4. Combine the wet and dry ingredients and stir well.
  5. Mix in the chocolate chips or chunks of chocolate bar.
  6. Form into a circle (about one inch thick) on a cookie sheet (lined with parchment paper or greased with coconut oil) and bake for 20-22 minutes.
  7. Let cool for 15 minutes, cut into desired size scones and…
