Okay okay I KNOW. I was on a holiday baking roll but these banana bread brownie muffins were too good not to share. That would’ve just been rude for me to keep this recipe to myself. ;) When my best friend Allie visited from Boston a couple of weekends ago we had a paleo brownie baking night and these paleo banana bread brownie muffins were one of the results and DANG are they good!!!

There’s something so comforting about banana bread - it reminds me of childhood and simpler times so I always love making version I can eat now. And what better way to turn classic banana bread up a notch than by adding in chocolate!?

I think that’s what I love most about food - the way it can make you nostalgic and bring you back to old memories. I love how certain foods and dishes and smells and tastes can completely take me back to certain points in my life. Banana bread reminds me of coming home from junior high and high school to tea and a snack waiting for me thanks to my sweet mom. Brownies remind me of my sorority’s open houses and philanthropy events (because there were always brownies present). Bananas in general remind me of waking up at 4am for marathon training a couple of years back because they were the go-to fuel for long runs (they’re still my go-to pre-workout snack).

Paleo Banana Bread Brownie Muffins

Paleo Banana Bread Brownie Muffins

Ingredients

  • 1 1/4 cup almond flour
  • 3/4 cup cacao powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 2 eggs
  • 1/2 cup almond butter (can sub for other nut/seed butter)
  • 1/4 cup melted coconut oil
  • 4 large bananas
  • 1 tsp pure vanilla extract
  • Optional: 2/3 cup chopped chewy dried bananas (I like using the Barnanas brand)
  • Optional: 1/4 cup raw cacao nibs for topping

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit
  2. In a large bowl, combine the almond flour, cacao powder, salt and baking soda and mix well.
  3. In a separate bowl, mash your bananas.
  4. In another . separate, combine the eggs, nut butter, melted coconut oil, mashed banana and vanilla extract. Stir well.
  5. Combine the wet and dry ingredients and stir.
  6. Add in your chopped dried bananas. Mix well.
  7. Pour batter into a lined muffin tins.
  8. Sprinkle tops with cacao nibs.
  9. Bake for 30 minutes.
  10. Let cool and enjoy!
