I’m not sure what’s going on but I’m going through a major cooked apple phase and I am HERE for it. Whether I’m topping cauliflower “oatmeal” with cinnamon sautéed apples, eating sautéed apples with banana ice cream and grain free granola on top like a paleo version of an apple crisp or just eating cooked apples on their own – I can’t get over them.

Having ulcerative colitis, I have to be super careful about eating too much fiber and overdoing it on the raw fruit and veggies can really hurt my digestion. So cooked apples allow me to enjoy one of my favorite fruits without compromising how my gut feels.

And it’s funny because even before changing my lifestyle and eating the way I do now, I never loved apple pie. Like never ever. But for some reason any health-ified version of it now makes my mouth water.

So it’s safe to say these mini paleo apple pie bites have been hitting the spot lately! They’re easy to make and made from real, whole foods.

The best part? They taste like dessert but can be eaten for breakfast they’re so healthy. ;) PLUS they’re no bake – so they’re tasty AND easy to make!

They’re the perfect way to enjoy a classic flavor combo without compromising your gut health.

Paleo No-Bake Apple Pie Bites

Paleo No-Bake Apple Pie Bites

Ingredients

Crust
  • 1/2 cup coconut flour
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1 cup raw almonds
  • 1 tsp pure vanilla extract
  • 1/2 cup almond butter (can sub other nut butter)
  • 3 Tbsp honey (can sub with maple syrup or date syrup for vegan option)
Filling
  • 2 large apples
  • 2 tsp pure vanilla extract
  • 3 Tbsp lemon juice
  • 1/4 cup honey
  • 1/3 cup water
  • 1 Tbsp cinnamon
  • 1/2 tsp beef gelatin powder (optional - omit for vegan option or if you do not have access to any)

Instructions

  1. Start by chopping your apples into small pieces. Place in a pot on the stove, along with the water and lemon juice. Cook on low heat until apples are soft. Note: make sure to keep an eye on them and stir frequently to keep them from burning or sticking.
  2. While the apples are cooking, place ALL of your crust ingredients into a food processor and blend until no large nut chunks are noticeable. Press the crust into the bottom of paper muffin liners.
  3. When the apples are done cooking, if there is a lot of excess liquid left, drain. If you have beef gelatin available (not sponsored, but I love using Vital Proteins!), add the 1/2 tsp and quickly stir so it doesn’t clump. If you do not have been gelatin, ignore that step.
  4. Then, in a small bowl, mix the apples with the honey and cinnamon.
  5. Place the apple mixture on top of each crust and place in the freezer for about 30 minutes.
  6. Take out and enjoy! Store in an airtight container in the freezer or fridge.
